Turkey Pwnage!

On the 20th, for the first time ever, I made a full Turkey dinner for my friends. I made a bunch of appetizers for us to snack on all afternoon, and of course the full course Turkey dinner with gravy, stuffing, carrots, butternut squash, mashed potatoes and cranberry sauce ( cheated on that one, got it pre-made at the deli lol) . One of my friends made a nice Amaretto cheesecake for desert. I ate sooooo much! I feel like I'll be rolling around until the 24th haha.

I don't have the pictures with me *yet*. As soon as I get a hold of them from my friend's camera, I'll update this opening post for you guys.

So here is what I made.

Turkey - Preheat oven at 340 degrees

1x 10lbs Turkey (thawed, rinsed inside out, and no giblets)
1 box of chicken stock
1-2 tbsp butter
Fresh Thyme twigs ( about a dozen )
1 tsp crushed rosemary
1 tbsp paprika
1 tsp garlic powder


Place cleaned turkey in a roasting pan, lined with a grill to prevent the bird from touching the bottom of it. Pour out chicken stock in the bottom, and have some in the cavity (it'll help getting moisture in the meat). Take about 3/4 of the thyme sprigs, and stuff them inside the cavity in the liquids.

With your fingers, rub the butter all over the turkey, and without breaking the skin, go under the skin and rub some in there too. After washing your hands, sprinkle garlic powder, paprika, and remaining herbs evenly all over the surface of the turkey.

Place lid on the roaster, and bake in oven at 340 for 4 hours. For the last cooking hour, place lid sideways to let the steam out. To know if it's cooked, just slide a knife between the leg and breast towards the bone, and if the liquids that surface from the puncture hole come out clear (no redness), it's done.

Make sure to baste with the bottom juices every hour, and right when you take it out once done, before letting it rest in the covered roaster for 20-60 minutes before cutting.

Gravy


-With your baster or carefully with a spoon, take all the juices from the bottom of the roasting pan (including the ones still in the cavity), and put in a small saucepan.
-With a spoon, spoon out the floating fat on top of the liquid and discard. Place over medium heat.
-in a cup, whisk together about a cup of water with 4 tbsp cornstarch, until it's no longer clumpy. Whisk into the stock, and bring to a gentle boil over medium heat, whisking continuously.
-Season with salt and pepper to taste once it's thickened enough. If the sauce isn't thick enough, add a little more dissolved cornstarch into it, until desired consistency.

My Stuffing with Bacon (yes, bacon! :D)

In a large bowl, mix thoroughly using hands:

2 loafs sliced whole wheat bread, a couple of days old (so it's not too squishy like fresh bread), ripped into little pieces
4 big white onions, diced
6 celery stalks, diced in small pieces
1 package of smoked bacon slices, sliced into 2cm/1inch pieces
4 green apples, peeled, cored, and chopped into same size pieces as the onions
1/3 cup dried summer savory
4 garlic cloves, minced
salt and pepper
2 cups (500ml) butter at room temperature
1/3 cup chicken or turkey stock


In a greased (with butter) baking dish, pack all the mixture tightly and evenly. Cover with aluminum paper and bake in the center of oven at 420 for 30 minutes, then uncover for 15 minutes to let top crisp a little bit.

Reflection on life

Here is a beautiful video tribute to Troy Dixon I found on youtube.



I'm still extremely saddened from his departure. Troy was so young, beautiful, and a very talented individual. He had so much going on in his life; he seemed to have the best of everything. It's such a shame that life can just take us away in an instant, and it's scary how the people we love and know can just be gone like that.

It really makes you think... how fragile we are. We get so caught up with everyday life, and sometimes we don't take the time to stop and appreciate everything we have. It's a busy and crazy world around us, and we try our best to do our part and be somebody. Every individual is different, special, loved and cared for by someone. We all share the same faith. It kinda makes you wonder, what kind of a mark will you leave on others once you're gone. How will you be remembered?

It makes me reflect on my life, and how it's been a real roller coaster ride. I've had very hard times, and very blessed times. I've dealt with a great deal of pain, struggles, victories and losses. If I can sum up my achievements, they wouldn't be many or of great importance; however, I am proud of myself for being strong and for trying my best at life. It happened to me, to have considered giving up on many occasions; feeling overwhelmed, depressed and desperate. But like everything else, things come and go, and you can't always have everything your way. All you can do, is try your best and you'll always have the satisfaction of knowing that you did. There will always be things that are beyond our control. And that in itself is what makes me go on.

I appreciate what life has given me. The good and the bad. Because if it wasn't for all of it, I wouldn't be the woman that I am today.

RIP Troy "T-Bag" Dixon

I'm sad to announce that Troy Dixon, who played "T-Bag" in my favorite show Pure Pwnage, has passed away on Saturday December 6th 2008 in a vehicle accident. This tragedy and has left me in total shock and heart broken.

"Although Troy has been doing stand-up comedy for very few years, he is quickly becoming a popular name in the clubs. He has performed well known venues such as Yuk Yuks, The Laugh Resort, Absolute Comedy, The Alt-Dot Comedy Lounge and many others. He has also showcased for Just For Laughs at the All-Black Comedy show. He has performed at various College campuses and private functions. Troy describes his style to somewhat of an "Eddie Murphy and Jim Carrey in a blender, minus the racial identity!" Aside from being an actor, and model, Troy is also a talented musician, and has been involved around it most of his life spreading the Trumpet, Piano, Drums. He is also a music producer, and hopes to crash the music world in the near future. Troy, a Humber College COMEDY program alumni, continues to perform at comic venues around North America."

Kung Fu Fun

I'm totally have an epic Nerdgasm over this new addition to my Kung Fu collection - I found these awesome DVD sets at Walmart for under 5$ yesterday:
Jackie Chan Classics, and Warriors of the East


I mean, I absolutely love Jackie Chan. And look how freakin' young he was back then! hehe it's kinda cute.

The great thing about old Kung Fu movies is the "cheese factor". All the one-liners and the cheesy special effects make them hilarious. And for some reason, there's always the little old Master with the rideculous mustash and haircut, and long white beard. Something about them beards, just makes them EPIC, and allmighty! hahaha. I always wondered how they grew them, cuz I thought Asians didn't really have facial hair ... Must be because they're made of AWESOMENESS !!!!

Speaking of awesomeness, I just watched Kung Fu Panda last night (finally!). My god it was hilarious! Jack Black has always been one of the very few actors who make me laugh; and I found his job in the film awesome. I was happy to see Jackie Chan as the Monkey, Seth Rogan as the Manthis, and Angelina Jolie as the Tigress; for celebrity goodness.

But omg, the jokes were the best! I honestly don't remember the last time I laughed so much. Deffinitely worth adding to my collection of EPICNESS! *makes a fist and twitches eye*

Introduction

Current Mood: Tired, headache and a little cynic

So, I finally decided to go ahead and get a blog up. I suppose I could make the best out of my first post and talk a little bit about myself. lol.

I'm Sapphire. Young woman in my early twenties, living in Canada. I'm a Taurus, and single mother of one.

In my free time I enjoy cooking, playing video games, art, music, movies, books, learning languages and spending time with my family and friends.

Now, because it's almost 1 am here, and I've spent a couple of hours making my profile looking pretty, I'm gonna be lazy and copy/paste some shit from my myspace page lol. Enjoy!

Random facts about me:

- I can't stand the feel of cotton balls
- I hate banana flavored things, but I love fresh bananas. Weird thing is that I used to hate them when I was a kid...
- I love taking long bubble baths; total relaxation
- Cheese is my favorite food (except the strong ones like blue...eww)
- I feel more comfortable speaking in front of a group, than being one on one with a stranger (depends on the person ofcourse).
- I like to watch the food channel all the time; sometimes it's scary that I can guess what they're gonna put in the food, before they say it.
- Sometimes I drink out of the juice and milk containers
- I sleep sideways with a pillow or blanket between my knees
- My family is very important to me
- I like to listen to people's accents
- Cheesecake is the best way to bribe me for something
- I seem to only play my piano when I feel sad or down about something
- I can quote the entire Lord of the Rings extended edition trillogy from begenning to end as I watch them (not while watching with others, because I know it can be annoying lol)
- When I was a little girl, I wished I was a mermaid. When we'd go to the beach, I'd run to the water and start calling out to fish to come and get me to take me home
- I have a penchant for Martial Arts; something so freakin sexy about them
- I can't stand selfish, arrogant and discriminating people
- I wanted to be a movie director when I grow up; and own my own restaurant when I'd retire
- Bruce Willis and Jackie Chan are my celebrity crushes since forever
- I always thought that being adopted by the Osbournes would have been so freakin' awesome
- I'm right handed, but can use both hands equally to sculpt and play the piano
- I can blow bubbles with my toungue
- I prefer wine over beer; and usually only drink it with food.
- I hate politics
- I'd love to go to Japan and live there for at least a year to really experience the culture
- I'm infatuated with Asian cultures
- I love sleeping
- My first language is French, then English, and have learned Spanish (though, not practicing much, I'm a little rusty). I'm interested in taking on Mandarin and Japanese as future projects
- I wish I had a house so I could have a nice big kitchen and a garden
- I hate cauliflower - it looks too much like brains and it smells like feet
- I love peacock feathers
- My favorite flowers are Asian lilies and Orchids
- I eat capers on pasta ; people tend to find that weird... I love it
- Olives are so good! aspecially when picked out of the jar and eaten spurratically throughout the day
- I'm the oldest of 3 in my family; my brother and sister are twins 8 1/2 years younger than me
- I'm a cat person. Dogs are cute too, but I don't like their smell.
- I love kissing
- My favorite color is Orange
- My favorite childhood memories are the good times my best friend Mindy and I had together. We used to laugh so much, and were too little brats. We used to drive people crazy when we were in the same room
- I have vertigo
- I prefer ambiant lighting than ceiling lights
- I wish fast food didn't taste so good, wasn't so damn bad for you and cheap; and that real good food wasn't so freakin expensive :(
- I don't really care about not having a car. I take the bus, walk or cab it if I need to. Cheaper, and better for the environment
- My favorite soda-pop is Dr. Pepper
- My worst courses in school where Math and Sciences; my best were Arts and Languages
- Biggest pet peeve: people who think and act like they know everything and don't listen to what others have to say.
- Best 3 skills/talents: Artistic, good cook, musician
- Best 3 personality traits: easy to get along with, intuitive, patient
- Worst 3 flaws: procrastinator, not organised, and I have a tendancy to "ignore" my problems and after a while I end up overwhelmed
- I love nature, the great outdoors
- I'm a geek and proud of it
- My favorite French words are: Pamplemousse (grapefruit) and Citrouille (pumpkin)
- I think girls are prettier than boys, but boys are easier to get along with than girls
- I like my steak thick, marinaded, and grilled medium, served with mushrooms... *drools*
- My favorite fruit is Pineapple
- I can't stand the feeling and noise it makes when I walk on snow
- I prefer being called Sapphire by my friends than my real name Véronick (pronounced the same as Véronique). Eventually, when I have money to waste on something, I'll legally add it to my name so I can get away with it.
- If I was made of water, I'd be a small river with soft cascades
- My favorite perfume is "Buriti" from Fruits of Passion
- Though I am not into it myself, I find tasteful goth/punk culture attractive
- I hate horror and chick flicks (with a couple of exceptions)
- My favorite fictional character is Captain Jack Sparrow
- My favorite made up quote is "What would Jesus do for a Klondike bar?"
- Favorite Ice Cream: Dairy Queen's Oreo Blizzard , or Rainbow Sherbet or Maple Pecan
- I change my hair color often because I get bored
